- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup cooked chicken, shredded
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/4 cup chopped cilantro
- 1/2 cup sour cream (for serving)
- 1/4 cup salsa (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- On a large baking sheet, place one tortilla in the center.
- Layer half of the cheese, chicken, bell peppers, onions, and cilantro on top of the tortilla.
- Place another tortilla on top and repeat the layering process.
- Finish with a final tortilla on top.
- Using a sharp knife, cut the quesadilla ring into wedges, being careful not to cut all the way through.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the tortillas are golden brown.
- Remove from the oven and let it cool for a few minutes before serving with sour cream and salsa.
