Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup cooked chicken, shredded
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream (for serving)
  • 1/4 cup salsa (for serving)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, place one tortilla in the center.
  3. Layer half of the cheese, chicken, bell peppers, onions, and cilantro on top of the tortilla.
  4. Place another tortilla on top and repeat the layering process.
  5. Finish with a final tortilla on top.
  6. Using a sharp knife, cut the quesadilla ring into wedges, being careful not to cut all the way through.
  7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the tortillas are golden brown.
  8. Remove from the oven and let it cool for a few minutes before serving with sour cream and salsa.
