Description
A refreshing dessert combining the tartness of blackberries with a hint of lemon and thyme.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup fresh blackberries
- 1/2 cup granulated sugar
- 2 eggs
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon fresh thyme, chopped
- 1/4 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- Combine flour, powdered sugar, and salt in a bowl.
- Cut in the butter until the mixture resembles coarse crumbs.
- Press into the bottom of a greased 8×8 inch baking dish.
- Bake for 15 minutes.
- Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and chopped thyme in another bowl.
- Stir in the blackberries, gently folding them into the mixture.
- Pour the blackberry mixture over the baked crust.
- Sprinkle baking powder over the top and bake for an additional 25-30 minutes, or until the center is set and the edges are lightly golden.
- Allow to cool before cutting into squares.
- Serve as a refreshing dessert.
