This Blackberry Balsamic Brie Grilled Cheese is a gourmet twist on the classic — creamy brie, tangy blackberry balsamic sauce, and golden toasted bread come together for the perfect sweet-savory bite in just 20 minutes.

- 4 slices sturdy bread (sourdough, artisan white, or multigrain)
- 4–5 oz brie, sliced thinly
- 2 tablespoons softened butter
For the Blackberry Balsamic Sauce:
- 1 cup fresh or thawed blackberries
- 2 tablespoons balsamic vinegar
- 1 teaspoon honey or maple syrup
Instructions
- In a small saucepan, combine blackberries, balsamic vinegar, and honey. Simmer over medium heat for 5–7 minutes, mashing berries slightly, until sauce thickens. Remove from heat.
- Butter one side of each bread slice. On the unbuttered side, layer brie slices and spoon over some blackberry balsamic sauce. Top with the other bread slice, buttered side out.
- Heat a skillet over medium-low heat. Place sandwiches in the pan and cook 3–4 minutes per side until bread is golden and cheese is melted.
- Serve immediately, sliced in half.
Notes
Brie rind is edible and adds flavor, but you can trim it for a milder taste. Sauce can be made up to 3 days in advance and stored in the fridge. For a variation, swap blackberries for figs or raspberries.
