Ingredients

  • 2 cups shredded birria meat
  • 1 cup birria broth
  • 8 corn tortillas
  • 1 cup shredded cheese (such as Oaxaca or mozzarella)
  • 1/2 cup chopped onions
  • 1/4 cup chopped cilantro
  • 1 tablespoon vegetable oil
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the vegetable oil over medium heat.
  3. Soften the corn tortillas in the skillet for about 30 seconds on each side.
  4. Dip each tortilla in the birria broth to soak.
  5. Fill each tortilla with shredded birria meat and a sprinkle of cheese.
  6. Roll the tortillas and place them seam-side down in a baking dish.
  7. Pour remaining birria broth over the enchiladas.
  8. Top with more cheese and chopped onions.
  9. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  10. Garnish with chopped cilantro before serving.
