- 2 cups shredded birria meat
- 1 cup birria broth
- 8 corn tortillas
- 1 cup shredded cheese (such as Oaxaca or mozzarella)
- 1/2 cup chopped onions
- 1/4 cup chopped cilantro
- 1 tablespoon vegetable oil
- Salt to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat the vegetable oil over medium heat.
- Soften the corn tortillas in the skillet for about 30 seconds on each side.
- Dip each tortilla in the birria broth to soak.
- Fill each tortilla with shredded birria meat and a sprinkle of cheese.
- Roll the tortillas and place them seam-side down in a baking dish.
- Pour remaining birria broth over the enchiladas.
- Top with more cheese and chopped onions.
- Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
- Garnish with chopped cilantro before serving.
Notes
- For extra flavor, add a squeeze of lime before serving.
- These enchiladas can be made ahead of time and reheated.
