Description

A delicious and comforting orzo dinner recipe that is perfect for any night of the week.


Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Stir in the bell pepper and zucchini, cooking until softened.
  4. Add the cherry tomatoes and cook for another 2 minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Add the orzo pasta and oregano, reduce heat, and simmer until the orzo is cooked, about 10 minutes.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh basil before serving.
