- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 2 cups vegetable broth
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Stir in the bell pepper and zucchini, cooking until softened.
- Add the cherry tomatoes and cook for another 2 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add the orzo pasta and oregano, reduce heat, and simmer until the orzo is cooked, about 10 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh basil before serving.
