Bean and Bacon Soup

Description

A heartwarming and delicious soup that combines the rich flavors of beans and bacon, perfect for family gatherings.


Ingredients

  • 1 pound of bacon, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups of chicken broth
  • 2 cans of white beans, drained and rinsed
  • 1 can of diced tomatoes
  • 1 teaspoon of thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Add the chicken broth, white beans, diced tomatoes, and thyme to the pot.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  5. Stir in the cooked bacon and season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker soup, mash some of the beans before adding them to the pot.
  • Feel free to add vegetables like carrots or celery for extra flavor.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
