- 1 lb chicken breast, diced
- 1 cup cooked rice
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha sauce
- 1 cup mixed vegetables (bell peppers, carrots, broccoli)
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- In a bowl, mix mayonnaise, sweet chili sauce, and sriracha sauce to create the Bang Bang sauce.
- Season the diced chicken with salt and pepper, then cook in a skillet over medium heat until fully cooked.
- In a separate pot, prepare the rice according to package instructions.
- Add the mixed vegetables to the skillet with the chicken and sauté until tender.
- Combine the cooked chicken and vegetables with the Bang Bang sauce, stirring to coat evenly.
- Serve the chicken mixture over a bed of rice and garnish with chopped green onions.
Notes
- Adjust the spiciness by adding more or less sriracha sauce.
- For a healthier option, use brown rice instead of white rice.
