Description

A delicious and spicy chicken bowl that combines tender chicken with a creamy, spicy sauce, served over rice and topped with fresh vegetables.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup cooked rice
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 2 green onions, chopped
  • Salt and pepper to taste


Instructions

  1. In a bowl, mix mayonnaise, sweet chili sauce, and sriracha sauce to create the Bang Bang sauce.
  2. Season the diced chicken with salt and pepper, then cook in a skillet over medium heat until fully cooked.
  3. In a separate pot, prepare the rice according to package instructions.
  4. Add the mixed vegetables to the skillet with the chicken and sauté until tender.
  5. Combine the cooked chicken and vegetables with the Bang Bang sauce, stirring to coat evenly.
  6. Serve the chicken mixture over a bed of rice and garnish with chopped green onions.

Notes

  • Adjust the spiciness by adding more or less sriracha sauce.
  • For a healthier option, use brown rice instead of white rice.
