Description

Delicious and festive truffles inspired by classic banana pudding, perfect for Easter celebrations.

Ingredients

Scale
  • 1 cup vanilla wafer cookies, crushed
  • 1/2 cup powdered sugar
  • 1/2 cup cream cheese, softened
  • 1 ripe banana, mashed
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil
  • Sprinkles for decoration

Instructions

  1. In a mixing bowl, combine crushed vanilla wafer cookies, powdered sugar, cream cheese, mashed banana, and vanilla extract. Mix until well combined.
  2. Chill the mixture in the refrigerator for about 30 minutes to firm up.
  3. Once chilled, scoop out small portions and roll them into balls.
  4. In a microwave-safe bowl, melt white chocolate chips and coconut oil together until smooth.
  5. Dip each truffle into the melted chocolate, allowing excess to drip off.
  6. Place the truffles on a parchment-lined baking sheet and decorate with sprinkles.
  7. Refrigerate until the chocolate is set, about 15-20 minutes.
