Description

A moist and fluffy banana cake topped with spiced vanilla buttercream, perfect for any occasion.


Ingredients

  • 3 overripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened (for buttercream)
  • 1 teaspoon vanilla extract (for buttercream)
  • 1/2 teaspoon ground cinnamon
  • Pinch of nutmeg


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.
  2. Cream together 1/2 cup of softened butter and 1 cup of sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the mashed bananas and 1 teaspoon of vanilla extract.
  4. Whisk together the flour, baking soda, and salt in another bowl. Gradually add this to the banana mixture, alternately with 1/2 cup buttermilk, beginning and ending with flour.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the buttercream by creaming together 1/2 cup of softened butter, powdered sugar, 1 teaspoon of vanilla, cinnamon, and nutmeg until smooth.
  8. Once the cake has cooled, frost it with the spiced vanilla buttercream.
  9. Slice and serve your delicious banana cake!

Notes

Using very ripe bananas will enhance the natural sweetness of the cake. Frost just before serving for the best texture.
