Description

Delicious baked taquitos filled with creamy cream cheese and shredded chicken, perfect for family gatherings or cozy nights in.


Ingredients

  • 10 oz Small flour tortillas
  • 8 oz White cream cheese (softened)
  • 2 cups Shredded cooked chicken breast
  • 2 tbsp Cooking oil (for brushing)
  • 1 tsp Garlic powder
  • 1 tsp Kosher salt
  • 2 tbsp Fresh green cilantro (finely chopped)
  • 0.5 tsp Red paprika (for dusting)
  • 1 medium Ripe avocado
  • 0.25 cup Sour cream
  • 1 tbsp Lime juice


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a baking sheet by greasing it lightly with cooking spray or oil.
  3. Combine the softened cream cheese, shredded chicken, garlic powder, and kosher salt in a mixing bowl. Stir until well blended into a creamy filling.
  4. Take a tortilla, spoon about 2 tablespoons of the filling mixture onto the center, and roll tightly, folding in the sides.
  5. Place seam-side down on the prepared baking sheet and repeat with the remaining tortillas and filling.
  6. Brush the tops of the taquitos with cooking oil and sprinkle with red paprika.
  7. Bake for 15-20 minutes until golden brown and crisp.
  8. Garnish with chopped cilantro before serving.
  9. Mash the avocado and mix with sour cream and lime juice for dipping.

Notes

Serve these taquitos with a side of guacamole for an extra treat. They can also be frozen before baking for a quick meal later.
