Description

A classic frittata combining eggs, crispy bacon, and earthy potatoes baked to perfection.


Ingredients

  • 8 large eggs
  • 6 strips bacon (chopped)
  • 2 medium potatoes (diced)
  • 1/2 cup heavy cream
  • 1/4 cup fresh chives (chopped)
  • 1/2 cup cheddar cheese (grated)
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Preheat your oven to 375°F.
  2. Cook bacon in a skillet until crispy. Remove bacon and set aside.
  3. Add potatoes to the same skillet and cook until golden brown.
  4. Whisk eggs with cream in a bowl and season with salt and pepper.
  5. Pour egg mixture over the potatoes and sprinkle bacon and cheese on top.
  6. Cook on stovetop for 3 minutes.
  7. Transfer skillet to preheated oven and bake for 15-20 minutes until set.
  8. Garnish with fresh chives before serving.
