Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Add the potato wedges to the bowl and toss until they are well coated with the seasoning mixture.
- Place the seasoned potatoes in a baking dish and pour the vegetable broth over them.
- Bake in the preheated oven for about 45 minutes, or until the potatoes are golden and tender, stirring occasionally.
