Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 2 cups apples, peeled and diced
  • 1 tsp cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1/4 cup flour
  • 1/4 cup butter, softened


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans.
  4. In a separate bowl, beat cream cheese, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the cream cheese mixture over the crusts in the mini pans.
  7. In another bowl, combine diced apples, cinnamon, brown sugar, oats, flour, and softened butter.
  8. Top the cheesecake mixture with the apple mixture.
  9. Bake for 20-25 minutes or until set.
  10. Let cool before serving.

Notes

  • Serve with whipped cream for added flavor.
  • Can be made a day in advance and stored in the refrigerator.
  • Adjust the sweetness of the apples based on preference.
