Ingredients

  • 45 lbs pork shoulder
  • 2 cups apple cider
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large bowl, mix together the apple cider, brown sugar, salt, pepper, thyme, and rosemary.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Season the pork shoulder with salt and pepper, then sear it in the skillet until browned on all sides.
  5. Transfer the pork shoulder to a roasting pan and pour the apple cider mixture over it.
  6. Add chopped onion and minced garlic around the pork.
  7. Cover the roasting pan with foil and place it in the oven.
  8. Cook for 4-5 hours, or until the pork is tender and easily pulls apart with a fork.
  9. Remove from the oven and let it rest for 15 minutes before slicing.

Notes

  • For extra flavor, marinate the pork shoulder in the apple cider mixture overnight.
  • Serve with roasted vegetables or mashed potatoes for a complete meal.
