Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup apple cider
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  5. Add the apple cider, eggs, vanilla, cinnamon, nutmeg, and salt; mix until well combined.
  6. Pour the cheesecake filling over the crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a stronger apple flavor, reduce the apple cider by simmering it before adding to the filling.
  • Top with whipped cream and apple slices for garnish.
