Description

A heartwarming soup recipe perfect for cozy winter evenings, inspired by Amish cooking traditions.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup potatoes, diced
  • 1 cup corn, frozen or fresh
  • 1 cup green beans, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 1 cup cooked chicken, shredded (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté until the vegetables are tender.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the diced potatoes, corn, green beans, thyme, and parsley. Season with salt and pepper.
  6. Reduce heat and let the soup simmer for about 20 minutes, or until the vegetables are cooked through.
  7. If using, add the shredded chicken and heat through before serving.

Notes

  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • For a vegetarian version, substitute chicken broth with vegetable broth and omit the chicken.
  • Feel free to add other vegetables you have on hand.
