Description
Deliciously flaky and sweet, these almond croissant cinnamon rolls combine the best of both worlds for a delightful treat.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup almond flour
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 packet active dry yeast
- 1/2 cup warm milk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup almond paste
- 1/4 cup sliced almonds
- 1/2 teaspoon ground cinnamon
- 1/4 cup powdered sugar (for icing)
Instructions
- In a bowl, combine warm milk and yeast; let it sit for 5 minutes.
- In a separate bowl, mix flour, almond flour, sugar, and salt.
- Add the yeast mixture, melted butter, egg, and vanilla to the dry ingredients; mix until a dough forms.
- Knead the dough for about 5 minutes until smooth, then let it rise for 1 hour.
- Roll out the dough into a rectangle and spread almond paste evenly over it.
- Sprinkle sliced almonds and cinnamon on top of the almond paste.
- Roll the dough tightly and slice into rolls.
- Place rolls in a greased baking dish and let them rise for another 30 minutes.
- Bake at 350°F (175°C) for 25-30 minutes until golden brown.
- Let cool slightly, then drizzle with icing made from powdered sugar and a little water.

Notes
- For a richer flavor, use European-style butter.
- These rolls can be made ahead and frozen before baking.
- Adjust the sweetness by adding more or less sugar in the icing.
