A hearty and cheesy vegetable lasagna that is perfect for a comforting dinner.
Ingredients

- 9 lasagna noodles
- 2 cups marinara sauce
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup mushrooms, sliced
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Heat olive oil in a skillet over medium heat and sauté zucchini, bell pepper, and mushrooms until tender.
- Add marinara sauce and Italian seasoning, then simmer for 5 minutes.
- Spread a layer of marinara sauce in a baking dish.
- Layer 3 lasagna noodles, half of the ricotta, vegetable mixture, and 1/3 of mozzarella.
- Repeat the layering: marinara, noodles, ricotta, vegetables, and mozzarella.
- Top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
- Bake for 30 minutes or until cheese is melted and bubbly.
- Let cool for 10 minutes before slicing and serving.
Notes
Feel free to add any other vegetables you love or substitute with your favorite cheese.
