Description

A hearty and cheesy vegetable lasagna that is perfect for a comforting dinner.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a skillet over medium heat and sauté zucchini, bell pepper, and mushrooms until tender.
  4. Add marinara sauce and Italian seasoning, then simmer for 5 minutes.
  5. Spread a layer of marinara sauce in a baking dish.
  6. Layer 3 lasagna noodles, half of the ricotta, vegetable mixture, and 1/3 of mozzarella.
  7. Repeat the layering: marinara, noodles, ricotta, vegetables, and mozzarella.
  8. Top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
  9. Bake for 30 minutes or until cheese is melted and bubbly.
  10. Let cool for 10 minutes before slicing and serving.

Notes

Feel free to add any other vegetables you love or substitute with your favorite cheese.
